Berry French Toast Casserole*

Ingredients

  • Vegetable oil (or butter)
  • French bread (12-14 cups) I used half a loaf
    • PS You can use other breads such as regular white bread, brioche, croissant, etc.
  • 8 large eggs
  • 2 c milk
  • 2 tsp vanilla extract
  • 1 tsp cinnamon
  • 2/3 c brown sugar
  • 1 c sliced strawberries
  • 1/2 c blueberries
  • 1-2 tbsp powdered sugar
  • maple syrup (optional)

Instructions

  1. Grease a 9″x13″ casserole dish with vegetable oil or butter.
  2. Cut up French bread into cubes and add to casserole dish (about 3/4)
  3. In a large bowl, combine eggs, milk, vanilla extract, cinnamon, and brown sugar. Whisk mixture and mix well. Pour mixture into casserole.
  4. Slice strawberries. Top casserole with strawberries and blueberries.
  5. Wrap the casserole with saran wrap and refrigerate for 4 hours (or overnight).
    • This is to let the bread soak up the egg mixture
  6. Pre-heat oven to 350 degrees. Bake for 35-40 minutes.
  7. Sprinkle with powdered sugar.
  8. Serve with maple syrup and enjoy!

*Notes

This recipe requires at least 4 hours resting time in the refrigerator.
